Profiteroles So although I have plenty of uni assignments and revision still to do which is taking up the majority of my time - my preventing the usual shopping trips, coffee dates and ladies that lunch escapes - lock-down is giving me plenty of time. Last week, in need of a new challenge, I started looking up recipes for profiteroles! Something I never really used to like eating to be honest but had a sudden craving for - so strange how these things come and go. I've never attempted choux pastry before, in fact the only time I've seen it made is on Bake off! But they often make it look so easy - probably cause they're much better bakers than me, but you don't know till you try right?!! Simple Coffee-Time Biccies Home lock-down has got my family going slightly stir crazy! I'm loving the extra baking and cooking time, locking myself in the kitchen whenever I can and have found some great recipes online and in the newspaper (BBC Good Food is always a favourite; there's some great pages to follow on insta too for inspiration and recipes and the telegraph food and drink section is getting bigger every day!!) Upside-Down Banana Cake

Well I've been wanting to make an upside down cake for a while and 'lock-down' has given me the perfect excuse to spend more time in the kitchen! I spotted some rather ripe bananas in the fruit bowl and made the mistake of asking my family what they thought I should make, the answers came back unanimously for a crumble 😒 - banana crumble is a family favourite, I'll share the secret recipe another time - but having made crumble a few days before I fancied trying something different and found this recipe on the BBC Good Food App (a great source for all recipes - sweet, savoury and everything in-between - it's where I get a lot of inspiration for my cooking) Not having quite all the ingredients - of course I adapted or used similar and it tasted so good!!! Jamie Dodger Celebration Cake

Such a simple recipe but a great crowd pleaser that’s bound to impress! It was my housemates birthday recently and as tradition goes, I wanted to make home a cake but knowing that his go to sweet treats are biscuits I wanted to incorporate a childhood fave! I used a simple cake batter recipe, filled with jam, decorated with chocolate ganache frosting & cut Jamie dodgers and voila... he was so pleased!! Recipe - cake: 8oz Caster sugar 8oz Soft baking butter (cheaper than normal butter and works just as well!) 8oz Self-raising flour 1tsp baking powder 4 medium eggs 1tsp vanilla essence Filling: 1/2 a jar of strawberry or raspberry jam (be sure to take out any large lumps of fruit) Frosting: Approx.150ml double cream 240g white chocolate (I used lidl own brand -only 30p a bar- doesn’t have to be anything fancy) Method: 1) cream the softened butter with the Caster sugar untill well combined 2) add three of the eggs - one at a time - whisking the mixture as quick a...
 Simple Lemon Drizzle Baking is something I wish I could do more of. As a student it’s difficult to find ways of incorporating it into work and I’m often put off by expensive ingredient and recipes requiring things I’ve never even heard of let alone seen in the aisles of lidl. When I do manage to bake, the produce is either demolished by housemates in minutes or left around until its past its best (dependent on who’s in the house!!!) This simple lemon drizzle provides a perfect resolution: easily accessible ingredients and ability to be sacked up or down, it uses a pretty standard cake batter mix with the addition of lemon juice which can then be smothered in tasty drizzle Ingredients: For the Cake - 4/6/8 oz Caster Sugar 4/6/8 oz Butter (softened) 4/6/8 oz Self Raising Flour (preferably sifted but don’t worry if not) 2/3/4 Medium sized eggs 1 tsp baking powder 1 lemon (juiced) For the Drizzle - 1 lemon (juiced) Approx. 6 tbsp Caster sugar (rough guide - best ...
